-For one or two cows is it better to do wire fencing or is it okay to do barbed wire.
Haven’t used barbed wire for a looong time; all our enclosures are electric fenced; if enough wood is available what about the old options? stone walls? thick hedges?
-How much land is required for one or two cows.
depends on what kind of land/what and how much feed grows there; we try not to graze things too short, recovers quicker that way; keep them company if possible!
-Will two bulls be fine together no females.
they will always be fine 😉 we have the trouble of rebuilding fences etc.CharlyBonifaz

Memberit is not only a problem of smaller and wider bows or different size of oxen; the yoke works pretty much like an evener and thus the chain should adequately move away from the center towards the side of the stronger oxen if used for pulling loads.
in France they build yokes for 3 oxen, the youngsters in the middle; those are pure training yokes.
I’d go with erika’s advice …

that may depend: Texas Longhorn are browsers and even as calves mine were at least as interested in brush as they were in gras
In rough terrain a pack animal is more useful than a wagon.
why not use cattle for packing? They have been ridden 3000 years ago in Africa and Asia …
and if you prefer small, there are small breeds 😉
well, I do like goats, but billies have a smell to them …
