Earthwise Farm and Forest, Bethel, VTLearn how to make Ricotta, Fromage Blanc, Yogurt and Butter in your own kitchen! Get acquainted with butter molds and learn how to add a personal touch to your final butter, cheese or yogurt products. With simple instruction and good quality raw milk, it an easy and exciting activity adding some more treats for the holiday season.
Sponsored by Rural Vermont, this class will cover dairy processing basics, will introduce you to using butter molds, and will offer some other ideas for adding flavor to your soft cheeses. The class will also provide info about how and where to purchase local, raw milk. Attendees will get hands-on experience including an opportunity to taste-test and bring some product home.
Lisa and her husband Carl Russell own and operate Earthwise Farm and Forest where they raise heritage breed Thanksgiving turkeys, grass-fed livestock for meat, eggs and dairy, and use draft animals for logging and field work. They sell raw milk from their farm and are welcoming new customers. Lisa and Carl are on Rural Vermont’s Board of Directors and have been active members since 2000. ModeratorThese workshops have been a hit. She has had to turn people away pretty much every class. There is surprising interest. Lisa will probably hold more when the grass greens up, and production increases again.
